 在寒冷的冬季,往往使人覺得因寒冷而不適,而且有些人由於體內陽氣虛弱而特別怕冷。因此,在冬季要適當用具有禦寒功效食物進行溫補和調養,以起到溫養全身組織、增強體質、促進新陳代謝、提高人體防寒的能力,維持機體組織正常功能,抗拒外邪、減少疾病的發生。下面介紹幾款冬季養生滋補菜餚供食者選用。

  羅漢果煲豬肺

  用料:羅漢果1個,豬肺24克,調料品適量。

  制作:將成熟的羅漢果洗淨,切成薄片,豬肺切成小塊,擠出泡沫,洗淨放入砂鍋中,加水適量,再放入羅漢果片同煮,確後加入調料即可食用。

  功效:潤肺止咳、清熱化痰,適用幹燥熱咳嗽

  黃精雞翅

  用料:黃精60克,雞翅10支,大豆50克,核桃仁、海帶各30克,調味品適量。

  制作:黃精洗淨,放入砂鍋內,加適量清水,熬取汁液,將大豆洗淨,人熱水中浸泡一夜,海帶洗淨泡發,切成條狀,雞翅洗淨瀝於水、鍋中放水、下入雞翅,再放入黃精汁、大豆、海帶和調味品,加鍋蓋煮30分鐘以上即可。

  功效:黃精雞翅有健脾潤肺、滋陰益精、補腦增壽的作用,是補肺任品。

  雙耳冬菇

  用料:水發銀耳、木耳、冬姑各100克,精瘦肉150克,雞湯適量,黃酒、香油、鹽、澱粉各少許。

  制作:將上料摘好洗淨放鍋內,置火上,用雞湯或精瘦肉湯爆燉熟透時,適入鹽、黃酒、香油少許再調入澱粉汁,待湯汁黏稠明亮時即可。

  功效:益氣、滋陰、止血。體弱消瘦、低熱者及出血病患者食用尤為適宜。


  八寶豬肚

  用料: 豬肚1個,糯米150克 紅棗10枚 蓮子、苗米、英實各15克,枸杞15克,火腿腸末15克,葡萄幹15克,食鹽、味精等調料適量。

  制作:豬肚洗淨,糯米淘洗幹淨,將糯米、紅棗、相把、蓮子 茁米、熒實、葡萄十、火腿腸未、食鹽、味精等混合拌勻後灌人豬肚內,旺火蒸熟後食用。

  白鴨爆蟲草

  用料:門鴨1只,冬蟲夏草100克食捻少許。

  制作:白鴨除毛去髒洗淨蟲草洗淨裝入紗布袋個封口、把蟲草放人鴨腹內加水上火輕煮,至肉焊為度加食鹽等調味,煮沸即成。佐餐台風,食肉飲湯,半月為l療程。

  功效:滋腎潤肺、寧嗽化痰、適用於支擴病久、正氣已虛、疲乏無力 咳嗽痰少等癥,是支擴、肺結核病緩解期的調補佳膳。

  銀耳杏仁白果董

  用料:銀耳100克.甜杏仁、馬蹄粉各50克 白果10個.馬蹄250克,冰糖適量。

  制作:銀耳浸透,洗淨; 甜杏仁、白果(去殼除心)用水浸泡3小時,洗淨,馬路粉用水調溶;冰糖打碎,馬蹄去皮、洗淨切小粒:把銀耳、甜杏仁、白果放入滾水,鍋中武火煮滾、改文火、侵3小時,依次放入冰糖馬蹄粒,冰糖溶後攪人馬蹄粉即成。

  功效:清肺潤燥、斂肺止咳 用於肺癆、肺燥之咳喘痰少、十咳無痰適於肺氣腫、慢支、支擴等癥.

  白楚釀藉

  用料:鮮藕500克 荔苞米、百合、蓮子、芡實各15克 瓜片15克,窒櫻桃、杏仁各15克,糯米適量。

  制作:鮮藕洗淨,將淘洗淨的糯米裝入藕孔眼內.塞緊、用刀背敲拍孔口,使之封閉不漏、再把毆藕放人鍋內煮熟,撈出用清水漂淨.切成二厘米厚片;浸泡後的蓮子去皮蕊,再與薏米、百合、芡實同時將藕片擺成風午形狀,撮上白糖 上籠族至稀爛、覆扣於園盤內,將白糖熬汁澆在糯米飯上。

  功效:清熱潤肺,養心安神。適用於肋虛、久咳、熱癇煩渴、失眠心悸等此,是中老年人的理想膳食。

  靈芝紅棗烏雞煲


  用料:烏雞1只,靈芝25克,菜膽50克、黃酒10克,雞精,味精各2克,雞油30克,構把子20克,紅棗8枚,竹筍30克,蔥、薑、鹽、胡椒粉少許。

  制作:靈芝切成片,用鱉血炒制、烏骨雞去毛、內髒及爪洗淨,紅棗去核洗淨,竹筍用溫水發透,菜膽洗淨;薑、蔥切段;靈芝、烏雞等材料,置武火燒沸,再州文火堤25分鐘,加竹筍、菜膽、構袍子、雞精、味精、鹽、雞油煮熟即成。

  功效:益精氣 止咳端、安神、降血糖、利關節,適用於老年性慢性氣管炎、支氣管哮喘、高血糖等癥。
